Make a Classic Cobb Salad

This easy recipe is packed with flavor.

Hearty and refreshing all at once, cobb salad is the perfect way to use up any leftover boiled eggs.

Classic Cobb Salad
Serves: 4
Cook time: 30 minutes

Ingredients

Dressing:

  • 1 cup Olive Oil
  • 1/3 cup red wine vinegar
  • 2 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp sugar
  • 2 cloves garlic
  • kosher salt
  • pepper
Salad:
  • 6 cups arugula
  • 6 cups romaine
  • 3 oz blue cheese, chopped
  • 3 hard boiled eggs, chopped
  • 6 strips bacon, chopped
  • 3 tomatoes, cubed
  • 3 skinless chicken breasts cubed
  • 2 avocados, peeled pitted and cubed
  • salt and pepper to taste

Preparation
Combine all dressing ingredients in a food processor until smooth. Season with salt and pepper. Assemble salad with ingredients in rows across the lettuce bed.
